Ha Long Bay cruises, 3 days and 2 nights
The second night is where the bay stops being a day trip. It also doubles the road time you have already paid for, which is the real argument in its favour.
The three-day itinerary is not simply two days with more of the same. The second night usually takes the boat further from the main port, often into Bai Tu Long or the outer reaches of Lan Ha, and that is water most one-night guests never see.
It also improves the ratio. You have already spent seven hours in a vehicle to get here and back; the second night costs no additional road time and roughly doubles the hours on the water.
Two reasons to stick with two days. Some people simply do not sleep well on a moving boat, and the second night is when that becomes clear. And the third morning is usually short, so if you are counting days against a tight Vietnam itinerary, the extra night buys you less than the calendar suggests.
